Fresh Kimchi (Geotjeori) with @7aekwang 🥬 배추겉절이|白菜の浅漬けキムチ ∎ Napa Cabbage Prep • 1u002F2 mini napa cabbage (baechu) • 3 Tbsp coarse salt • 2 cups water ⑴ Salt the napa cabbage for 30 minutes. ⑵ Rinse once with water. ⑶ Cut into bite-sized pieces. ∎ Seasoning • 5 Tbsp Korean red pepper flakes (gochugaru) • 8 Tbsp lukewarm water ⑴ Soak the gochugaru in lukewarm water. • 2 Tbsp soy sauce • 3.5 Tbsp grated garlic • 1.5 Tbsp grated ginger • 2 Tbsp sugar • 1.5 Tbsp sesame oil • 1.5 Tbsp fish sauce (aekjeot) • 6 stalks of green onion • 1 Tbsp salted shrimp (saeujeot) ⑴ Mix all the ingredients together. ∎ Final Steps ⑴ Coat the napa cabbage with the seasoning sauce. ⑵ Sprinkle sesame seeds on top.
